Table — Collection

Dining & Catering

Table architecture, live fire and service that reaches every seat together.

The collection

The kitchen is in-house. Every table setting, counter and service line here was run by our own brigade.

Food is the only part of an evening every guest experiences at the same moment. We schedule the entire night backwards from it.

Design philosophy

Hot food, all at once

Service lines are drawn so the last table is served within eleven minutes of the first.

Cook in front of people

Live counters are not theatre for its own sake — they hold quality that a holding cabinet destroys.

The table is a set

Linen, glass, height and light are designed with the same care as the stage behind it.

Behind the work

Menu tasting

A full sit-down tasting of your final menu, plated as it will be served.

Brigade planning

Chef counts, holding equipment and service staff sized to guest numbers and venue distance.

Service rehearsal

Runners walk their routes before doors open.
